ZUCCHINI-CAULIFLOWER SWEET
RELISH
 
10 c. zucchini, ground remove seeds
4 c. cucumber, ground
4 med. onions, ground
2 sm. cauliflower heads, ground
1 1/2 c. water
3 tsp. salt
3 c. vinegar
5 3/4 c. sugar
1 1/3 tbsp. dry mustard
1 1/3 tbsp. turmeric
1 tbsp. pepper
2 2/3 tbsp. celery seed
1 1/3 tbsp. nutmeg

Put in large container. Add salt and water. Cover and let stand overnight. Drain and add all spices and vinegar and sugar. Bring to a light boil and cook 30 minutes. Pour into hot sterile jars. Makes 9 1/2 pints.
