FRENCH OVEN BEEF STEW 
2 lbs. beef stewing meat, in 1 1/2" cubes
2 med. onions, cut in eighths
3 stalks celery, cut in lg. pieces4 carrots, quartered
1 c. tomato juice
1/3 c. quick cooking tapioca
1 tbsp. sugar
1 tbsp. salt
1/4 tsp. pepper
1/2 tsp. basil
2 med. potatoes, cut in slices 1/4" thick

Combine beef, onion, celery and carrot in a 2 1/2 quart casserole. Combine tomato juice, tapioca, sugar, salt, pepper and basil and pour over meat and vegetables. Cover and bake in a preheated 300 degree oven about 2 1/2 hours. Add potatoes and cook 1 hour longer. Stir occasionally. Serves 8. NOTE: I usually add more vegetables.
