SOUTHERN WILD GRITS 
1 c. white hominy grits
5 c. boiling water
1 1/2 tsp. salt
1/2 tsp. baking powder
1 c. Parmesan cheese
Freshly ground black pepper
1 beaten egg
1 tbsp. milk
1/2 c. Italian flavored bread crumbs
2 tbsp. butter
1 scant tsp. instant onion flakes

Add grits to boiling water, salted. Reduce heat and simmer 25 to 30 minutes, stirring occasionally. Cool 30 minutes, add baking powder, 3/4 cup cheese, onion and pepper. Mix well.

Combine egg and milk and cooked grits into well greased baking dish. Top with bread crumbs and remaining cheese. Dot with butter.

Bake in preheated 350 degree oven for 25 minutes. Great dish with chicken or meat dish.
