HAM AND CHEESE PIE 
1 deep-dish 9" pie crust
1 c. (4 oz.) shredded Cheddar cheese
1 tbsp. plus 1 tsp. flour
1 1/2 - 2 c. chopped, cooked ham
1/4 c. chopped onion
1/4 c. chopped green pepper (may be omitted)
3 eggs, beaten
1 c. milk
1/2 tsp. dry mustard
Dash of Tabasco sauce (may be omitted)
1/8 tsp. salt
White pepper to taste

Line a 9 inch deep dish pie plate with pastry. Prick bottom and sides of pastry with a fork. Bake at 400 degrees for 3 minutes; remove and gently prick again. Bake an additional 5 minutes. Combine cheese and flour; sprinkle in pastry shell. Top with ham, onion and green pepper. Combine remaining ingredients; mixing well. Pour mixture into pastry shell. Bake at 350 degrees for 45 minutes or until set.
