HAM POT PIE | |
4 to 5 med. sized potatoes Ham slice (approximately 1 1/2 lb.), diced in 3/4 inch squares 1 pie crust stick Peel potatoes and cut into bite sized pieces and boil in 4 quart pot. After potatoes have boiled for approximately 10 minutes, drain water and add fresh (gets rid of the starch floating on the water), and add diced ham. Make pie crust, following directions on back of pie crust box. Roll out pie crust and cut into 1 inch squares. When boiled potatoes feel soft to touch with a fork, reduce heat to medium, add pie crust squares, spreading evenly over top of potatoes and ham, stirring in gently. When liquid mixture begins to thicken, remove from heat and serve. The thicker the better. Leftovers: Add small amount of water and cook at low heat, stirring occasionally to keep from sticking to pot. As liquid thins, small amounts of water may be added and heat increased. |
