PEAR HONEY 
9 c. pears
1/2 c. crushed pineapple
1 lemon or lime
5 c. sugar

Wash, pare and chop up before measuring pears. Run through food chopper using medium chopper (or fine if desired). Combine pineapple with the pears. Add the lemon (or lime) juice and rind. Add sugar and cook over slow heat, stirring frequently for 20 minutes. Pour into jars and seal.
