DATE NUT CAKES 
1 lb. chopped dates
1 lb. pecans
1 c. flour
1 c. sugar
2 sticks melted butter
4 eggs
1 tsp. vanilla
Dash salt
1/2 lb. red candied cherries
1/2 lb. green candied cherries

Cut cherries in half; keep 1/2 of each for decorating. Chop dates and nuts a few times. Sift flour, baking powder and salt. Add chopped dates, nuts and 1/2 cherries.

Melt butter, let cool, then pour over above mixture. Separate eggs. Beat egg yolks, sugar and vanilla together, then pour over mixture.

Beat egg whites and fold into cake mixture (medium stiff). Use paper liners or grease miniature muffin tins. Fill 3/4 full. Decorate with the remaining cherries. Bake at 325 degrees for 20 minutes. Makes approximately 8 dozen.
