GOURMET POTATOES 
6 med. potatoes
1/4 c. butter, melted
3 c. shredded Cheddar cheese
1/3 c. green onions (or 1/4 tsp. onion powder)
1 tsp. salt
1/4 tsp. pepper
1 1/2 c. sour cream
2 tbsp. butter

Cook potatoes in skins. Mash coarsely with fork. Set aside. Blend melted butter with cheese, onions, sour cream, salt and pepper. Fold mixture into potatoes. Pour in greased 2 quart casserole dish. Dot with butter. Bake at 350 degrees for 25 to 30 minutes.
