GOURMET POTATOES 
6 med. potatoes
1/4 c. butter
1/3 c. chopped green onions
2 tbsp. butter
2 c. grated cheddar cheese
2 c. sour cream
Salt & pepper to taste

Scrub and boil potatoes in skins until just beginning to get tender (don't over cook). Cool and grate coarsely. Melt 1/4 cup butter, cheese and sour cream. Stir in chopped green onions. Combine all ingredients with potatoes, adding salt and pepper to taste. Pour into greased casserole. Dot with 2 tablespoons butter. Bake at 350 degrees for 25 to 30 minutes. Serves 10.
