GOURMET CHEESE POTATOES 
6 med. potatoes
2 c. cheddar cheese, shredded
1/4 c. butter
1 c. milk
1/3 c. onion, chopped (opt.)
1 tsp. salt
1 tsp. pepper
2 tbsp. butter
Paprika

Cook potatoes in skins. Peel and shred coarsely. In saucepan combine cheese and 1/4 cup butter. Stir over low heat until almost melted. Remove from heat and blend in milk, onion and seasonings. Fold into potatoes and turn into a greased 2 quart casserole. Dot with butter and sprinkle with paprika. Bake at 350 degrees for 30 minutes. This may be prepared the day before, sprinkling with paprika before baking. Serves 6.
