SQUASH CAKE 
2 c. boiled squash
2 eggs, well beaten
2 tbsp. butter
6 tbsp. flour
1/2 c. Pet milk
2 tsp. vanilla
1/2 c. sugar (or sweet-low)

Mix squash, eggs, flour, butter, milk, vanilla and sugar (or sweet-low). Mix well. Pour in greased pan. Bake at 350 degrees until brown. Pick in the middle with a toothpick, if it comes out clean it is done. Set aside to cool. It is better when you chill overnight. You can also use pumpkin, merliton, carrots, or eggplants. The texture is the same.
