SQUASH GRIDDLE CAKES 
1 c. milk, scalded
1 c. strained squash
1 tbsp. butter
1 tbsp. sugar
1/2 tsp. salt
1 egg, beaten
2 tsp. baking powder
1 c. flour, sifted

Pour hot milk over squash. Add butter, sugar and salt. When cool, add egg, then the baking powder sifted with flour. Bake on a hot greased griddle. Makes 12 cakes.
