CORN MEAL GRIDDLE CAKES 
1 c. cornmeal
2 c. boiling milk
2 tbsp. butter
1 tsp. salt
3 tbsp. baking powder
1 c. flour
Cold milk

Put cornmeal in a mixing bowl and cover it with boiling milk. Stir to a smooth mush. Add butter and salt. Allow to cool. Sift baking powder into flour. Beat into mush. Add enough cold milk to make a thin batter. Beat until full of bubbles. Bake on hot griddle. Fine served with honey or your choice of syrup.
