BUTTERMILK GRIDDLE CAKES 
2 c. flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3 tbsp. sugar
3 tbsp. butter, melted
1 1/2 c. buttermilk
1 egg

Mix and sift dry ingredients. Beat egg, add milk and stir slowly into first mixture. Beat thoroughly and add melted butter. Drop by spoonful on a greased hot griddle. Cook one side. When puffed, full of bubbles and cooked on the edges, turn and cook other side. Makes about 18 cakes.
