CORN GRIDDLE CAKES 
1/2 c. cornmeal
1 1/2 c. boiling water
1 1/4 c. sour milk
2 c. flour
1/3 c. sugar
1 tsp. salt
1 tsp. baking powder
3/4 tsp. baking soda
1 egg (or 2 egg yolks)
2 tbsp. butter

Add cornmeal to boiling water and cook 5 minutes. Turn into bowl. Add milk and remaining dry ingredients, mixed and sifted, then egg and butter. Bake on griddle. Makes 24 griddle cakes.
