ZUCCHINI SQUASH CAKE 
1 1/2 c. cooking oil
4 eggs
3 c. sugar
1/2 tsp. salt
3 c. grated squash with peeling
1 1/2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda

Add sugar to oil, 1 cup at a time. When beaten, add 1 egg at a time. Then all squash and dry ingredients. Bake 350 degree oven for 55 minutes in greased and floured pan.

FROSTING:

8 oz. cream cheese (at room temp.)
1 stick butter, melted
1 lb. powdered sugar
1 tsp. vanilla

This frosting makes enough for two cakes.
