FILLETS IN LEMON DRESSING 
4 fillets of firm textured white fish
2 tbsp. grated onion
1 tbsp. finely chopped celery
4 tbsp. oil
4 slices toast, cubed
1 tbsp. chopped parsley
Juice of 1 lemon
Grated rind of 1/2 lemon
Freshly ground black pepper
Dash of paprika
butter

Saute onion and celery in oil. Mix in remaining ingredients. Place 2 fillets on the bottom of an oiled baking dish. Spread dressing over fish and top with remaining 2 fillets. Dust with paprika, dot with butter and bake at 375 degrees for 20 minutes or until fish flakes easily with a fork. Yield: 4 servings.
