MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. raw peanuts
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In a 1 1/2 quart casserole dish, stir together sugar, syrup, raw peanuts and salt, mixing well. Microwave on high 6 to 9 minutes until light brown. Add butter and vanilla and stir well. Microwave on high 1 to 2 minutes more. Peanuts will be light brown and syrup will be very hot. Add baking soda and gently stir until light and foamy. Pour onto a lightly buttered cookie sheet and let cool for 1/2 to an hour. When cool, break into small pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
