MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 c. peanuts (roasted and salted)
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 quart bowl stir together sugar and corn syrup. Microwave on HIGH for 4 minutes. Stir in peanuts and microwave on HIGH for 4-6 minutes, until light brown. Add butter and vanilla to mixture, blending well. Microwave 1-2 minutes. (Peanuts will be lightly browned and syrup very hot!) Add baking soda and gently stir until light and foamy.

Pour mixture onto lightly greased cookie sheet and let cool for approximately 1 hour. Break into small pieces and store in air-tight container. Makes about 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
