MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted salted peanuts or raw Spanish peanuts + 1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 quart casserole, stir together sugar and syrup. Microwave on high for 4 minutes. Stir in peanuts and microwave 3-5 minutes, until light brown. Add butter and vanilla to syrup, blending well. Microwave 1-2 minutes more. Peanuts will be lightly browned and syrup very hot. Add soda and gently stir until light and foamy. Quickly pour onto greased or nonstick cookie sheet and spread thin. Let cool and break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
