BLUEBERRY STREUSEL MUFFINS | |
1 1/2 c. flour 2 tsp. baking powder 1/2 tsp. salt 4 tbsp. butter 1/2 c. sugar 1 egg 1 tsp. vanilla 1/2 c. milk 1 1/2 c. fresh blueberries Sift together flour, baking powder and salt. In large bowl cream butter with sugar until fluffy. Beat in egg and vanilla. Stir in flour mixture, alternately with milk. Fold in blueberries. Spoon batter into paper cups, filling each about 2/3 full. Sprinkle with streusel topping. Bake at 400 degrees for 20 minutes or until tops spring back when lightly pressed. Cool on wire rack. STREUSEL TOPPING: 2 tbsp. butter 2 tbsp. brown sugar 1/4 tsp. cinnamon 1/4 c. chopped nuts (opt.) TOPPING: Melt butter, stir in brown sugar, cinnamon and nuts. |
