PUMPKIN APPLE STREUSEL MUFFINS 
Chop in food processor:

2 apples

Add and process until combined:

2 eggs (or 1/2 c. egg substitute)
1 c. canned pumpkin
1/2 c. vegetable oil

In large bowl mix:

2 1/2 c. flour
1 1/2 c. sugar
1 tbsp. pumpkin pie spice
1/2 tsp. salt
1 tsp. baking soda

To flour mixture add apple mixture and stir just until moistened. Spoon into muffin cups. Sprinkle streusel topping over batter. Bake for 35 to 40 minutes or until toothpick comes out clean.

Streusel topping: In small bowl, combine 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in 4 teaspoon butter until mixture is crumbly. Makes 24 muffins.
