ALL-AMERICAN GREEN BEAN
CASSEROLE
 
1 lb. mushrooms, sliced
1 sm. onion, chopped
1/2 c. butter
1/3 c. flour
3 c. milk, scalded
3/4 lb. sharp cheddar, cubed
1/8 tsp. tabasco sauce
2 tsp. soy sauce
1 tsp. salt
1/2 tsp. pepper
2 lb. fresh green beans, cooked or 3 pkg. frozen, julienne style
2 cans sliced water chestnuts, drained
1 can French fried onions, crumbled

Cook mushrooms and onions in butter for 5 minutes. Blend in flour. Add milk and cook, stirring until thick and smooth. Add cheese, tabasco, soy and seasonings. Simmer until cheese is melted. Add green beans and water chestnuts; mix. Turn into large greased casserole. Bake at 350 degrees for 15 minutes. Sprinkle with onions and bake 10 minutes longer. May be made ahead and refrigerated, allowing 30-40 minutes to heat through. Serves 8-12.
