POTATO PANCAKES | |
1 kg (2 lb.) potatoes 2 slices white bread, soaked in milk and mashed 1/2 c. (4 fl. oz.) milk 2 eggs 2-3 tbsp. flour Salt Freshly ground black pepper 250 g (4 oz.) lard 1. Peel and grate the potatoes into cold water so that they do not discolor. 2. Drain them and squeeze out all the liquid. 3. Mix the potatoes, bread, eggs, flour, salt and pepper. 4. Using a tablespoon, place small amounts of the mixture into the hot fat and flatten them with the back of the spoon. 5. Fry until crisp and serve hot. Serves 4-6. |
