BAKED BEANS | |
2 lbs. dried beans (yellow eye, navy or pea beans) 1 pkg. (12 oz.) meaty salt pork 2 med. or 1 lg. onion 1 c. white sugar 8 tbsp. molasses 1 tsp. salt 1/2 tsp. dry mustard 1/4 tsp. pepper Look over beans, remove bad ones. Place beans in a large crockpot, place sliced onion on top, pour sugar on that. Next, take a coffee mug and put in the molasses, salt, dry mustard, and pepper. Add water, stir and add to beans. Then add enough water to completely cover beans. I add enough water to start with so I don't have to keep adding it as I go along. Dry beans will soak up quite a bit of water. Keep covered with water and cook on low approximately 8 - 10 hours or so, until they are a nice brown color and they taste done. |
