CRAB QUICHE 
3 shallots or scallions, minced
4 tbsp. butter
6 oz. frozen crab meat, drained & chopped
3 tbsp. white wine
3 eggs
1 c. heavy cream
4 tbsp. Gruyere cheese, grated
Salt & pepper to taste
9 inch pie shell

Over moderate heat saute scallions in butter. Add crab meat and stir 3 to 4 minutes. Add wine. Raise heat to cook until liquid evaporates; set aside and cool. Combine eggs, cream, cheese, salt and pepper and crab meat. Pour in preheated pie shell (375 degrees for 5 minutes). Place pie in upper third of preheated 375 degree oven. Bake 30 minutes until brown.
