SOPAS 
1 lb. ground beef
1 (1 lb.) can kidney beans, drained
1 (15 oz.) can mild enchilada sauce
1 (8 oz.) can tomato sauce
1 tbsp. instant minced onion
1 (6 oz.) pkg. corn chips
2 c. (8 oz.) shredded cheddar cheese
1 (17 oz.) can kernel corn, drained

Brown beef in skillet with onions. Combine beans, enchilada sauce, tomato sauce in a mixing bowl. Add meat and about 1/2 the cheese.

Pour into a 2-quart casserole lined with corn chips. Sprinkle the rest of cheese around in a circle. Bake uncovered in preheated 375 degree oven for 20-25 minutes or until heated through. Remove from oven and sprinkle with extra cheese.
