GREAT-AUNT MARY'S LEMON CAKE | |
1 reg. pkg. lemon cake mix 1 pkg. lemon instant pudding 4 eggs 3/4 c. water 3/4 c. cooking oil Butter 1 c. powdered sugar 1/2 c. lemon juice Empty cake mix into bowl. Add instant pudding out of box. Add oil. Mix well. Add eggs and water. Mix well and pour into buttered loaf pans. This amount makes 2 loaves. Bake at 350 degrees for about 50-60 minutes. Meanwhile mix powdered sugar and lemon juice to make icing. Test loaves for doneness with toothpick. When cake is baked, take and smear a lot of butter on both cakes. (Being hot, it melts fast.) Then take a fork and make holes all over the top of the cake loaves. Mix icing again to get sugar off of the bottom of the bowl and pour this all over the cake loaves. |
