ZUCCHINI CASSEROLE 
2 tbsp. onion, chopped
1 tbsp. butter
1/2 lb. mushrooms, sliced
3 med. zucchini, sliced
1 tsp. salt
1/4 tsp. garlic powder
1/2 c. cheddar cheese, grated
1/2 c. bread crumbs

Saute onions and mushrooms in butter. Place in the bottom of a 2 to 3 quart casserole dish. Put sliced zucchini on top of mushrooms and onions. Mix spices and sprinkle over zucchini. Top with cheese and bread crumbs. Cover and bake 30 minutes at 375 degrees. Uncover and cook 15 minutes longer.
