ZUCCHINI CASSEROLE 
4 med. zucchini in chunks
4 tbsp. melted butter
3/4 c. grated carrots
1/2 c. chopped onion
1 1/2 c. seasoned stuffing mix
1 can cream of mushroom soup
1/2 c. sour cream
3/4 c. stuffing mix and butter for topping

Chop zucchini into 1/2 inch chunks. Parboil a few minutes, drain. While still firm put into casserole. Saute onions and carrots in butter. Add all ingredients together and put over zucchini. Saute 3/4 cup stuffing mix with butter. Sprinkle over top of onion and carrot mixture. Bake 40 minutes at 350 degrees.
