TURKEY SCALLOP 
1 (8 oz.) pkg. herb stuffing mix
3 c. cooked turkey, chopped
1/2 c. butter
4 c. turkey broth
1/2 c. flour
6 eggs, beaten
1/4 tsp. salt
1/4 tsp. pepper

Prepare stuffing according to directions. Spread in a 9 x 13-inch baking dish. Top with a layer of chopped turkey. In large saucepan, melt butter, blend in flour and seasonings and add cool broth. Cook and stir until thick. Stir small amount into beaten eggs and return to large pan. Pour over turkey. Bake at 325 degrees for 40 to 45 minutes or until hot through all mixture. Serve with hot Mushroom Sauce.

MUSHROOM SAUCE:

1 can cream of mushroom soup
1/4 c. milk
1 c. sour cream
1/4 c. pimientos, chopped

Heat and serve over casserole.
