SCALLOPED CHICKEN FOR 20 
5 lb. chicken breasts
2 eggs, beaten well
1 c. chicken fat
1 c. flour
2 qt. liquid (1/2 milk & 1/2 chicken broth)
Salt to taste
Bread stuffing
Bread crumbs
Butter

Cook chicken, remove meat from bones, dice. Make a sauce of eggs, fat, flour and liquid. Cook in double boiler and cool. Salt to taste. Butter a large baking pan, place stuffing in bottom of pan, then sauce, then chicken.

Make another layer of sauce, then chicken and then sauce. Top with bread crumbs. Bake in 320 degree oven until top is brown and stuffing is cooked through, about 25 minutes.
