HUNGARIAN NOODLE CASSEROLE 
1/2 lb. broad egg noodles (Dutch is good)
1/2 cup (1 stick) butter
1 (8 oz.) tub cottage cheese or ricotta cheese
1 cup dairy sour cream
1/2 cup sugar
Juice of 1 lemon
3 eggs, beaten
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla
1 cup raisins

Boil noodles (do not overcook or rinse). Add butter and stir well. Combine the rest of ingredients. Add to the buttered noodles and blend well. Put into a well greased deep 2-quart baking dish.

Bake at 350°F for 1 hour.

Makes 3 or 4 servings.

This is also a kugel, a traditional Jewish noodle dish. I've made kugel before but they never turned out this well. This was really delicious!! And this recipe will serve 6 people. I served it with chicken paprikash and it was a perfect combo but this will go with anything. It's so yummy we kept snacking on it long after dinner was over.
