NEW PEAS IN RICE RING 
1 pkg. (6 or 6 3/4 oz.) seasoned wild & white rice mix
3 lbs. fresh peas
Butter

Cook rice mix according to package directions. Meanwhile rinse and shell peas just before cooking to retain their delicate flavor. Cook, covered in boiling salted water to cover for 15 to 20 minutes or until peas are tender, drain and add just enough butter so peas glisten.

Butter a 1 quart ring mold when rice is done, turn into the mold packing down gently with spoon. Invert onto a warm serving platter and lift off mold. Spoon hot peas into center of rice just before serving. 6 servings.
