BLACK BOTTOM CUPCAKES 
2 lg. extra-ripe bananas, peeled
1 1/2 c. flour
1 1/3 c. sugar, divided
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1/3 c. vegetable oil
1 tsp. vanilla extract
1 lg. firm banana, peeled
2 pkgs. (3 oz. each) cream cheese, softened
1 egg
1 pkg. (6 oz.) chocolate chips

Slice extra-ripe bananas into blender. Whir until pureed (1 cup). Combine flour, 1 cup sugar, cocoa, baking soda and salt. Stir in pureed bananas, oil and vanilla. Spoon equal amounts of batter into 18 paper-lined muffin pans. Slice 2 slices of firm banana over each.

Beat cream cheese with remaining 1/3 cup sugar until light and fluffy. Beat in egg until blended. Stir in chocolate chips. Spoon equal amounts over each cupcake. Bake in 350 degree oven 30 minutes. Cool on wire racks. Makes 1 1/2 dozen cupcakes.
