L.'S BLACK BOTTOM CUPCAKES 
1 1/2 c. flour
1 1/3 c. sugar
1/4 c. unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 c. water
5 tbsp. vegetable oil
1 tbsp. cider vinegar
1 tsp. vanilla
1 (8 oz.) pkg. cream cheese, at room temperature
1 egg
6 oz. semi-sweet chocolate

Preheat oven to 350 degrees. Grease muffin tins. Mix flour, 1 cup sugar, cocoa powder, baking soda and salt in large bowl. Make well in center. Blend water, oil, vinegar and vanilla. Pour into well. Gradually incorporate flour into liquid, whisking until smooth.

Spoon batter into prepared tins. Beat cream cheese, remaining 1/3 cup sugar and egg in medium bowl with electric mixer. Stir in chips. Spoon over batter. Bake until tests done, about 25 minutes. Cool 10 minutes. Remove from tins and cool. Makes 18 cupcakes.
