1 1/2 c. all purpose flour 1 1/2 c.sugar 1/4 c. unsweetened cocoa powder 1 tsp. baking soda 1/2 tsp. salt 1 c. water 5 tbsp. vegetable oil 1 tbsp. cider vinegar 1 tsp. vanilla 1 (8 oz.) pkg. cream cheese, softened 1 egg 6 oz. semi sweet chocolate chips Preheat oven to 350 degrees. Grease muffin tins. Mix flour, 1 cup sugar, cocoa powder, baking soda and salt in large bowl. Make well in center. Blend water, oil, vinegar and vanilla. Pour into well. Gradually incorporate flour into liquid, whisking until smooth. Spoon batter into prepared tins. Beat cream cheese, remaining 1/3 cup sugar, and egg in medium bowl with electric mixer. Stir in chocolate chips. Spoon over batter. Bake until tester inserted in centers comes out clean, about 25 minutes. Cool in tins on racks 10 minutes. Remove from tins and cool. Store in airtight containers. Makes 18. |
