QUICK CORN LIGHT BREAD 
2 c. buttermilk
2/3 c. flour
1 1/4 tsp. baking soda
2 tbsp. shortening
2 c. cornmeal
1/2 c. sugar
1 tsp. salt

Mix first 6 ingredients. Add melted shortening. Pour into hot iron skillet and bake until done at 325 degrees. Let cool in skillet 15 minutes. Turn out and cover with foil.
