APPLES WITH SWEET POTATOES 
6 med. sweet potatoes
2 apples, cored and cut into 1/4 inch rings
1/2 c. orange juice
1/4 c. brown sugar
1/2 tsp. cinnamon
2 tbsp. butter

Cook potatoes until tender, about 30 minutes. Remove the skins and cut potatoes into 1/4 inch slices. Layer the potatoes in the bottom of a large baking dish. Top with a layer of apples. Pour the orange juice over the apples and potatoes. Mix the sugar and cinnamon and sprinkle over apples. Dot the casserole with butter. Bake uncovered at 350 degrees until apples are tender, about 30 minutes. Makes 6 servings.
