APPLES WITH SWEET POTATOES 
6 med. sweet potatoes
2 apples, cored and cut into 1/4 inch rings
1/4 c. brown sugar
1/2 c. orange juice
1/2 tsp. cinnamon
2 tbsp. butter

Cook potatoes until tender, about 30 minutes. Remove the skins and cut potatoes into 1/4 inch slices. Layer potatoes in bottom of large baking dish. Top with layer of apples. Pour orange juice over the potatoes and apples.

Mix the cinnamon and brown sugar and sprinkle over apples. Dot the casserole with butter. Bake uncovered at 350 degrees until apples are tender, about 30 minutes.
