SWEET POTATO AND APPLE 
6 med. sweet potatoes
Boiling salted water
1/2 c. molasses
1/2 c. butter
4 med. red apples, cored & cut in 1/2" slices
1/4 c. orange juice
1 tbsp. grated orange rind
1/2 tsp. salt

Scrub, then cook unpeeled potatoes in boiling salted water for 30 minutes or until tender.

Meanwhile, heat 1/4 cup molasses with 1/4 cup butter in skillet. Add sliced apples and turn, to coat with mixture. Simmer gently until barely tender (10 minutes), turning twice.

Drain potatoes, peel and mash or puree. Add remaining butter, molasses, orange juice, rind and salt. Beat until light and fluffy. Mound mixture on top of apple slices and serve immediately. Serves 10.
