ZUCCHINI RELISH 
1 1/8 lb. zucchini
4 med. onions (1 lb.)
1 lg. red pepper
1 lg. green pepper
2 lg. ripe tomatoes, chopped
4 tbsp. salt
1 tbsp. dried mustard
1 c. sugar
1 tsp. turmeric
2 c. cider vinegar
2 tsp. celery seed

Grind first 4 ingredients. Sprinkle all with salt and let set overnight in refrigerator. Drain vegetables, thoroughly. Put sugar, vinegar, mustard, turmeric, seed in pot and bring to a boil. Add drained vegetable and return to boil, reduce heat and simmer 40 minutes. Pour into 4 pint jars, leaving 1/2 inch head space. Process in hot water bath for 10 minutes.
