MINT APPLE RINGS 
1 c. sugar
1 c. water
1/4 c. corn syrup
1/2 tsp. green food coloring
2 or 3 cooking apples
1 tsp. mint flavoring

Combine sugar, water, syrup and coloring in skillet and simmer for 3 minutes. Wash and slice unpeeled apples in rings. With sharp knife, carefully cut loose the center seed and any rough places around them.

Stir the flavoring into syrup and then the apple slices. Simmer gently until apples are tender and transparent, about 15 minutes.

I like them at holiday time - very colorful!
