HOLIDAY SWEET POTATOES 
3 large sweet potatoes
2 tbsp. butter
1/2 c. milk
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tbsp. brown sugar
2 egg whites, stiffly beaten
1/2 c. pecans or walnuts
1 pkg. miniature marshmallows

Bake sweet potatoes at 400°F until soft, about 1 hour. Let potatoes cool, remove skins and mash with butter. Add milk, salt, cinnamon, nutmeg and brown sugar. Mix thoroughly. Fold in beaten egg whites, fold in nuts.

Bake at 400°F for 10 minutes in a greased casserole dish or pan. Top with marshmallows and broil until marshmallows brown.
