SWEET POTATO PUDDING 
2 lg. sweet potatoes
2 egg whites (or 1 egg), beaten
1 tbsp. sugar
1/4 c. raisins (optional or more if wanted)
1/2 tsp. cinnamon
2 tbsp. soft butter
1 c. 2% milk

Wash potatoes, cook in covered saucepan until soft. Peel and mash in a medium-sized bowl. (You should have about 1 1/2 to 2 cups of mashed potatoes.) Add other ingredients in order given. Mix well. Pour into baking dish. Bake at 450 degrees until lightly browned.
