ENGLISH POUND CAKE | |
1/2 lb. butter (1 c.) 1 c. sugar 5 eggs, separated 1 tbsp. grated lemon rind 2 c. flour - less 2 tbsp. 1/2 tsp. salt 2 tsp. baking powder 1 c. golden raisins In the bowl of your electric mixer, place the butter with the sugar. Beat on low speed until mixture is light (2 minutes). Add the egg yolks, one at a time with the flour, salt and lemon rind. Remove the 2 tablespoons of flour and sprinkle that over the golden raisins to coat them. Remove the bowl from the mixer and add the fruits. Beat the egg whites until stiff, in a separate bowl, and fold them in by hand. Grease a 1 1/2 quart fancy mold with 1 tablespoon butter. Pour in the batter and bake in a preheated 350 degree oven for 1 hour. When baked remove and turn out immediately on a cooling rack and let remain until cool. Keeps very well - freezes very well. |
