FRESH FRUIT COMPOTE | |
2 c. orange juice 1/4 c. sugar 1 1/2 bananas, sliced 1/2 apple, unpeeled, coarsely chopped 1/2 pear, unpeeled, coarsely chopped 1 orange, sliced and quartered 1/2 grapefruit, sliced and quartered 6 dried pitted prunes, each cut in half 1/3 c. raisins 2 kiwi fruits, sliced very thin Put the orange juice in a large bowl. Add the sugar and mix well. Add the sliced bananas. Add the coarsely chopped apple and pear to the juice mixture immediately to prevent discoloration. Add the sliced and quartered orange and grapefruit. Cut the dried pitted prunes and add along with the raisins. Mix well and keep all fruit covered by the juice. Add more juice if necessary. Cover and let stand in the refrigerator at least an hour in order for the prunes and raisins to absorb juice. Mix the fruit well and serve in bowls with plenty of juice. Decorate with thin slices of kiwi fruit floating on top. Cinnamon topped graham crackers are nice to serve with it. This dessert is loaded with vitamins and fiber. It keeps well in the refrigerator up to three days. |
