POTATO PANCAKES 
4 lg. baking potatoes (2 lb. pared)
1 sm. onion
2 eggs
2 tbsp. all purpose flour
Salt and pepper to taste
Dash ground nutmeg
Vegetable oil for skillet

Grate potatoes and onion into large bowl. Add eggs and beat until well blended. Stir in flour and add salt, pepper and nutmeg to taste. Oil skillet. Drop batter by tablespoons. Cook 3 minutes on each side until golden brown. Serve warm.
