BAKED CHICKEN BREASTS WITH
CHEESE
 
4-6 chicken breasts (boneless, halves)
Italian style bread crumbs
1 egg
Flour
Oil
4-6 slices Mozzarella cheese
1 c. cream (can use heavy cream, half and half or milk)
1/3 - 1/2 c. Parmesan cheese (according to your taste)
1/4 c. fresh chopped parsley

Bread chicken with flour, then dip in egg-water, then dip into Italian bread crumbs.

Brown breaded chicken in small amount of oil quickly, drain on paper towels and place in a flat casserole.

Place Mozzarella cheese over each breast.

Mix cream, Parmesan cheese and chopped parsley together. Pour over breasts. Bake at 325 degrees for 1 hour until browned and bubbly. Serve with rice pilaf.
