SAUSAGE HAWAIIAN | |
1 (1 lb. 7 oz.) can sweet potatoes, drained 1 (15 1/4 oz.) can pineapple chunks, drained (reserve juice) 1 (1 lb.) can apples 1/4 tsp. salt 1 c. pineapple juice 1 lb. smoked sausage, cut in chunks 1 c. brown sugar, packed 3 tbsp. cornstarch Put sweet potato, pineapple chunks and apple slices in a 2-quart casserole dish. Mix brown sugar, cornstarch, salt and pineapple juice together in a saucepan. Cook over medium heat, stirring constantly until smooth, thick sauce is formed. Pour sauce over sweet potatoes, apples and pineapple chunks. Bake at 350 degrees for 20 minutes. Remove from oven and mix in sausage chunks. Return to oven and bake 15 minutes more. Makes 4-5 servings. |
